Going to school during a pandemic can be extremely stressful. Trust me, I know by first hand experience. This is why it's so important to eat well, and be filled up in order to tackle your day. Here are some snacks that I like to bring to school that are delicious and easy!
Chocolate Banana Bread
Easy to make and sooooo tasty, here are the instructions down below!
INGREDIENTS
1 3/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
3/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed very ripe bananas
2 large eggs
2 teaspoons vanilla extract
1/4 cup vegetable oil
1/4 cup sour cream
2/3 cup semisweet chocolate chips, plus more for topping
INSTRUCTIONS
Preheat the oven to 350°F. Line a 9-inch loaf pan with parchment paper leaving an overhang on the two longer sides. Grease the parchment paper with cooking spray. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda and salt.
In a separate medium bowl, whisk together the mashed bananas, eggs, vanilla extract, vegetable oil and sour cream.
Add the banana mixture to the dry ingredients and stir just until combined then stir in the chocolate chips. Scrape the batter into the prepared loaf pan then sprinkle additional chocolate chips on top of the loaf.
Bake the bread for 50 to 60 minutes until a toothpick inserted comes out clean. Remove the bread from the oven and allow it to cool in the pan for 10 minutes before using the parchment paper overhangs to lift the loaf out of the pan and onto a rack to cool completely.
2. Strawberry Frozen Yogurt
A delicious smoothie like treat for all my ice cream lovers out there!
INGREDIENTS
4 cups frozen strawberries
3 Tablespoons agave nectar or honey
1/2 cup plain yogurt (non-fat or full fat)
1 Tablespoon fresh lemon juice
INSTRUCTIONS
Add the frozen strawberries, agave nectar (or honey), yogurt and lemon juice to the bowl of a food processor.
Process until creamy, about 5 minutes.
Add on any toppings you want
Serve the frozen yogurt immediately or transfer it to an airtight container and store it in the freezer for up to 1 month.
Extra, add an ice pack in your lunch bag to keep it nice and cold throughout the day!
3. PB&J Apples
Sandwich but snackier!
INGREDIENTS
2 apples
1/4 c. peanut butter
1/4 c. jelly
INSTRUCTIONS
Slice apples into ¼” rounds. Use a small cookie cutter to cut the core from the center of each slice.
Spread peanut butter on jelly on half of the slices then cover with the remaining halves.
Extra, add an ice pack in your lunch bag to keep it nice and cold throughout the day!
